Healthy Egg Muffin
1 tsp olive oil
1/2 of diced onion,
2 cups spinach
1/2 cup of ricotta cheese or low fat cottage cheese
1/3 cup of parmesan cheese
1 tbsp of dill
1/4 tsp red pepper flakes
6 slice tomato
Pre-heat oven to 350 degrees
Use cooking spray to coat the muffin pan
Heat the olive oil in a skillet adding the onions.
Let is cook for about 5 minutes, then add the spinach and let it cook for another 1 minute. Reserve
Combine all the other ingridients in a large bowl, eggs, ricotta cheese, Parmesan cheese and dill.
Stir the eggs.
Place the onion mix in the muffin pan.
Add the eggs and the sliced tomatoes on top.
Add extra spices of your choice.
Let it bake for 25 minutes
